Mediterranean Pasta Salad
If I need to meal-prep for lunch or make a simple side dish for a barbecue, I am always making this pasta salad! It’s perfect to make ahead of time, and it combines all my favourite flavours while still being healthy and satiating!

To prepare:
- Combine your dressing ingredients in a mason jar and shake to combine.
- Cook your pasta according to package instructions. Drain and rinse with cold water. Add a tablespoon of olive oil to the pasta and mix slightly to stop the pasta from sticking together while you prepare your veggies.
- Finely dice your cucumber, peppers, onion, halve your tomatoes and olives and add to a large bowl along with your rinsed and drained chickpeas and feta.
- Combine your pasta, mix-ins and dressing and toss to combine. Enjoy!
