Mediterranean Pasta Salad

If I need to meal-prep for lunch or make a simple side dish for a barbecue, I am always making this pasta salad! It’s perfect to make ahead of time, and it combines all my favourite flavours while still being healthy and satiating!

Instructions

To prepare:
  1. Combine your dressing ingredients in a mason jar and shake to combine.
  2. Cook your pasta according to package instructions. Drain and rinse with cold water. Add a tablespoon of olive oil to the pasta and mix slightly to stop the pasta from sticking together while you prepare your veggies.
  3. Finely dice your cucumber, peppers, onion, halve your tomatoes and olives and add to a large bowl along with your rinsed and drained chickpeas and feta.
  4. Combine your pasta, mix-ins and dressing and toss to combine. Enjoy!
