How to Make an Insane Burrito

Burritos are my absolute favourite, and I’m willing to do anything possible to have a delicious burrito! They are easily customizable, and so worth the effort, in my opinion. With that being said, since the beef cooks in 3-4 hours, you can easily do the prep in that time so that everything is ready at the same time! Then, you’ll have burritos to feed you all week, or a whopping 8 burritos for your family.

To make an insane burrito, you’ll need these components:

  • 8 large tortillas (I doubled Half Baked Harvest recipe found HERE, store-bought is fine too!)

  • Barbacoa (seasoned shredded beef)

  • Cilantro lime rice

  • Seasoned black beans or pinto beans

  • Grilled corn

  • Peppers & onions (seasoned with cumin & chili powder)

  • Queso or shredded cheese

  • Pico de Gallo

  • Guacamole

  • Hot sauce (optional)

  • Sour cream

  • Pickled onions & pickled jalepenos (optional)

It’s perfect because the meat, rice, beans, veggies, and queso can easily be reheated for whenever you want your burrito.

Below, I’ve included the recipes for the Barabcoa, Cilantro lime rice, Seasoned beans, Queso, Pico de gallo, and guacamole, but everything can be adjusted to your liking, of course!

Barbacoa

Ingredients

For the beef:

To prepare:
  1. Cube beef into chunks and season generously with salt and pepper. Sear in an oven-safe pan on medium-high heat with a couple of tablespoons of vegetable oil until golden brown.
  2. Add the rest of the barbacoa ingredients in a blender and blend until smooth. Pour over the marinade and cover.
  3. Bake at 350F for 3-4 hours or until the beef shred easily. At hour 3, you may want to add extra beef broth just to loosen it up.
  4. Once cooled, store in an air-tight container, and reheat when ready to assemble your burrito.

Cilantro lime rice

For the rice:

Instructions

To prepare:
  1. Wash the rice until the water runs clear.
  2. In a rice cooker, add the rice, and water. If you'd rather use the "finger method" for the rice/water ratio, add water from the top of the rice to the first knuckle of your index finger. Cook as usual.
  3. When the rice is ready, transfer to a large bowl. Add in the cilantro, lime juice, and salt to taste.

Seasoned Black Beans

For the beans

Instructions

To prepare:
  1. Heat a small pot on medium heat. Add olive oil, garlic, cumin, onion powder, and chipotle peppers. Cook for 1-2 minutes or until fragrant.
  2. Add in the canned black beans, broth, and salt and pepper to taste. (The liquid allows the black beans to soften slightly and have some flavour.)
  3. Bring to a simmer and cook, covered, on low heat for 15-20 minutes.
  4. Serve using a slotted spoon, and enjoy!

Spicy Queso

For the queso:

To prepare:
  1. Heat a small pan, on medium heat. Melt the butter and add in the jalapeño, garlic, and chili powder.
  2. Sauté for 2-3 minutes, then add in the heavy cream. Bring to a simmer for 7-10 minutes or until thickened slightly.
  3. Lower the heat, and add in the grated cheddar cheese, about 1/2 cup at a time.
  4. Add in sugar (this just cuts through the sharpness) and season with salt & pepper to taste. Serve warm!
