Smash Burgers

These burgers and perfect if you love a crispy burger instead of a thicker patty. The tangy burger sauce pairs so well with the charred onions, and fresh toppings!

The recipe for my homemade potato buns is included but you’re than welcome to cut the time in half by using pre-made buns and pre-ground beef.

Instructions

To make the burgers:
  1. Heat a large pan on medium-high heat. Place 4 balls of ground beef on the pan, and top with sliced onions.
  2. Cut out a small square of parchment paper that will fit the burgers. Using a large spatula, put the parchment paper square on top of a burger and push down with the spatula as flatten out as much as possible.
  3. After they're all smashed, allow the burgers to cook for 2-3 minutes.
  4. Flip the burgers and cook for another 2 minutes, then top with a slice of cheese. Stack one burger on top of another and remove from heat.
To make the bacon:
  1. Add the bacon in an even layer on a parchment-lined baking sheet.
  2. Turn the oven on to 350 F (The buns are also baked at 350 F so, I usually bake them one after another or simultaneously.)
  3. Add the bacon into the oven as the oven is heating up, and bake for 18-25 minutes, depending on how crispy you like your bacon.
  4. Remove and add to the paper towel lined plate until ready to assemble.
To make the fries:
  1. Slice fries into desired thickness and add to a bowl of cold water for at least 30 minutes.
  2. Preheat fryer to 325 F and dry off fries with a paper towel or dish cloth.
  3. Fry the potatoes for about 5 minutes until they soften but have little colour. Remove from basket.
  4. Increase the fryer heat to 375F. Add fries and cook for 3-4 minutes until golden brown and crispy. Add to a bowl and toss with salt. Serve immediately.
To assemble:
  1. Mix the sauce ingredients together in a small bowl.
  2. To assemble: Toast your buns in a pan with extra drippings from the burgers, or butter if you'd prefer.
  3. Then top the buns with the sauce, then on one side, add shredded lettuce, a double patty, 2 slices of bacon
