Garlic Soy Noodles
These noodles come together in 20 minutes and taste salt, savoury and pair perfectly with a soft, jammy egg. I like to add bok choi for a little brightness and green, but the noodles are amazing on their own!

For the soft-boiled eggs:
- Bring a large pot of water to a boil.
- Slowly, and carefully add in your eggs, using a large spoon or strainer.
- Let them boil for 6 minutes for a jammy egg, or 7 minutes for a slightly firmer yolk.
- Immediately transfer to a bowl of ice water and let sit for 3 minutes.
- Gently tap the egg on a hard surface to break up the shell and carefully pull of the shell until you have a perfect peeled egg. Set aside while you prepare your noodles.
For noodles:
- Bring a large pot of water to a boil, and cook your noodles according to package directions. In the last minute of cooking, add in your washed bok choi leaves to blanche. Rinse off your noodles and if toss in a little sesame oil to stop them from sticking.
- For the sauce: Combine the ingredients in a bowl and mix throughly to combine.
- Prepare your veggies, but keeping the green parts of the green onions separate, to toss in later.
- Heat a large pan or wok on medium-high, add in a drizzle of vegetable oil or sesame oil.
- Add in the white parts of your green onions, minced ginger and garlic, and sauté for about 2 minutes or until they are slightly softened. Add in your sauce and simmer for about 3-5 minutes or until thickened.
- Add in your noodles and toss to combine. Add in the green parts of the green onion, sesame seeds and toss to combine.
- Plate your noodles with a soft boiled egg and top with additonal sesame seeds, enjoy!
