Sourdough Pancakes

These pancakes are fluffy and have a little extra protein from the cottage cheese! It’s my go-to when I have active sourdough starter and want to impress my family and friends for breakfast!

To make the pancakes:
  1. Blend the cottage cheese until smooth, using an immersion blender, then transfer to a large mixing bowl.
  2. Whisk in the sourdough starter, eggs, oil, vanilla, and sugar.
  3. Add dry ingredients: Sprinkle in flour, baking powder, baking soda, and salt. Stir until just combined, batter will be thick.
  4. Whisk in 3 tablespoons buttermilk to loosen the batter slightly. Add another splash if needed for your preferred consistency.
  5. Let batter sit for 5–10 minutes for better hydration and rise.
  6. Heat a nonstick skillet over medium heat and lightly grease with a drizzle of oil.
  7. Scoop ¼ cup batter per pancake. Cook 2–3 minutes per side, until golden and cooked through.
  8. Serve warm with butter, and maple syrup and enjoy!
