Homemade McGriddles

This copycat McGriddle recipe is perfect if you’re craving a sweet AND savoury breakfast and is pretty close to the beloved classic. I also love that it has extra protein from the cottage cheese in the batter, without making them super dense!

For the bacon,
  1. Set the oven to 400 F.
  2. Add your bacon to a parchment-lined baking sheet and add to the oven. The oven does not have to be fully pre-heated.
  3. Bake for 15-20 minutes or until your desired doneness. Remove once slightly cooled and dab with paper towel.
  1. Blend the cottage cheese and eggs with an immersion blender or regular blender.
  2. In a large bowl, add all your dry ingredients and whisk to combine. Add in your cottage cheese/egg mixture, vanilla, and buttermilk. Whisk until fully combined.
  3. Heat a large pan on medium-low heat. Spray ring molds with cooking spray and place them on the pan. Add in batter to fill half the mold and sprinkle a little brown sugar or maple syrup on top. Add an extra spoonful of batter to cover.
  4. Cover and cook for 7-10 minutes until golden brown on the bottom and bubbly on the top. Carefully flip the pancakes. Cook for another 3-4 minutes and using a knife, separate the pancakes from the molds.
  5. Using the same molds, spray once again with cooking spray. Crack in your eggs, cover and cook for 3-4 minutes or until the whites are set but the yolks are slightly runny. Remove the ring molds, and add a slice of cheese and allow to melt for a minute.
  6. To assemble, add a thin spread of butter on the pancakes, add your egg, 2 slices of bacon broken in half, a drizzle of maple syrup and close it up!
