Shepherd’s Pie

This classic comfort meal is perfect for rainy spring days! The savoury beef combined with the soft cheesy potatoes is a match made in heaven.

Instructions

To prepare:
  1. Peel and quarter potatoes and boil in salted water until tender.
  2. Add milk, cream and butter to a saucepan on medium heat until the butter is melted.
  3. Rice or mash potatoes and add the cream mixture. Add cheese and salt to taste. Add egg yolks and mix to combine. Set aside.
  4. Heat a large saucepan on medium heat. Add olive oil, diced carrot and onion and sauté for 5-7 minutes. Season with salt & pepper.
  5. Add ground lamb and allow to brown for 8-10 minutes.
  6. Add tomato paste, grated garlic, and seasonings and let cook for a couple minutes.
  7. Add wine and simmer on low until the wine is almost fully evaporated.
  8. Add broth, Worcestershire sauce, soy sauce, frozen peas and carrots and stir. Cover and simmer on low for 20 minutes.
  9. Preheat the oven to 375 F. In a large baking dish add the meat, then add the potatoes on top in an even layer. Add parmesan if desired and bake for 30 minutes. Broil for 5 minutes until golden brown.
  10. Allow to sit for 10 minutes before serving and enjoy :)
