Sloppy Joe Baked Potatoes

This is one of my favourite recipes in my cookbook! Sloppy joes have always been a nostalgic meal for me. The sweet and savoury beef has the flavours of chili, but only takes 30 minutes to become perfectly tender and flavourful. Sloppy Joe Baked Potatoes

Instructions

For the baked potatoes:
  1. Preheat oven to 350 F.
  2. Wash the potatoes thoroughly and then poke them a few times with a fork. Wrap each potatoes in a wet paper towel and microwave for 7 minutes, two potatoes at a time.
  3. Unwrap potatoes from paper towels and add to a large square of tin foil. Drizzle each potato with olive oil, and sprinkle with salt & pepper. Using your hands, coat the whole potato with the olive oil.
  4. Add the tin foil wrapped potatoes to a baking sheet and bake for 45 minutes. Whiel they're baking, you can prep the sloppy joe filling.
  5. Unwrap the potatoes, add an extra drizzle of olive oil and then broil for 3-5 minutes or until the outside is crispy.
For the filling:
  1. Heat a large pan on medium-high heat. Add the ground beef, and allow it to cook untouched for 2 minutes to brown. Cook while breaking down the meat until fully browned.
  2. Once browned, add diced onion and red pepper. Sauté for 3-5 minutes or until softened.
  3. Add tomato paste, minced garlic, chili powder, brown sugar, steak seasoning, paprika, and salt. Cook for 3 minutes, stirring constantly.
  4. Add in the rest of the ingredients, stir and cover on low for 25-30 minutes. Adjust for seasoning.
  5. When ready to serve, slice open the potatoes, add butter, 1/4 cup of shredded cheese, mix to fluff up the potato. Then, add your filling, with 1/4 cup of shredded cheese on top. Melt in the microwave, and top with green onions, and enjoy!
