Cheesy Stuffed Crust Pizza

Making homemade pizza can be a quick, easy, and enjoyable experience! I do occasionally order in, but sometimes I’m craving a specific pizza that only I can make!

This is my favourite pizza recipe that takes less than 2 hours from start to finish. As a kid, my family and I used to love going to Pizza Hut, and this pizza is definitely inspired by their cheesy crusts.

Ingredients

Instructions

For the dough:
  1. Mix warm water, yeast, sugar and olive oil in a measuring glass. Allow to sit for 5 minutes for the yeast to bloom.
  2. In a large bowl, combine flour and salt.
  3. When the yeast is bloomed, add the yeast mixture to the flour and stir until it becomes a shaggy dough.
  4. Transfer dough to a work surface, and knead for about 10 minutes or until it becomes a smooth dough.
  5. Add dough to a greased bowl and cover with a kitchen towel and allow to rise for 45 minutes to 1 hour in a warm place. (I like to turn my oven on 350 F, so that ti starts up, give it 30 seconds and then turn it off. This makes your oven a slightly warm space for your dough to rise.)
For the sauce:
  1. Heat a medium pan on medium heat and add the olive oil. Add the garlic and cook for 1 minute or until fragrant and softened.
  2. Add in seasonings, and tomato paste and cook for another 2-3 minutes.
  3. Add the tomato sauce and simmer on low for 10-12 minutes, stirring consistently, until reduced and then remove from heat.
To assemble the pizza:
  1. Preheat your oven to 420 F. If you have a pizza stone, add it in the oven while you prepare your pizza.
  2. When your dough has risen, roll it out until it is a thin circle, using a little extra flour, if needed. Aim to make your pizza a little larger than your pizza stone or pan since you will be folding the crust over the cheese. Then, place the dough on parchment paper for easy transfer.
  3. Slice ~350g of cheese into thick pieces (about 2-2 1/2" long) and start placing them around the edge of your dough. Ensure there is not a lot of flour on the inside of the crust. Using your fingers, start pinching the dough over the cheese and pressing so that it sticks.
  4. Spread your sauce on the inside, and then sprinkle the grated cheese on top. Top with the pepperoni and chopped bacon. Transfer the pizza to the pizza stone.
  5. Bake for 20-25 minutes or until the crust is golden brown and bubbly. 5 minutes in, you can remove the parchment paper to allow the crust to get crispy on the bottom.
  6. Brush the crust with garlic butter, slice, and serve!
