Kimchi Fried Rice
This addictive dish combines one of my favourite snacks, kimchi with flavourful saucy rice, crispy bacon and a sunny-side up egg. A perfect dish for leftover rice.

To prepare:
- Slice the bacon into small pieces and cook in a large pan on medium heat until crispy. Remove and set aside.
- In the same pan, turn the heat up to medium-high and add diced celery, the whites of the green onion and white onion. Sauté until onions are translucent but still have a bite. Add in chopped kimchi and grated garlic and sauté for another 3 minutes.
- Add in rice and stir to break up and combine with the ingredients. Add back in bacon and begin to add your sauces.
- For the sauces, there isn't an exact measurement, I usually start with a few tablespoons of soy sauce, oyster sauce and hoisin and then season to taste with the rest! It's all up to you :)
- Add in the green parts of the green onion to garnish, mix and serve. Top with crispy shallots, a fried egg, black sesame seeds and extra kimchi!

This dish is a perfect combination of my favourite comfort foods. I saw this viral recipe a few months ago, and have been thinking about it ever since! Red Lobster’s cheddar bay biscuits are undeniably addictive, so I made a copycat version, where they get baked until crispy, on top of a creamy chicken filling, then brushed with garlic butter, of course!
This dish takes just over an hour to prepare, but it’s perfect for picky eaters, or just an easy weeknight dinner!
