Cinnamon Roll Apple Pie

This apple pie is perfectly sweet and gooey with the addition of a sweet and crispy cinnamon roll crust. I pride myself in making the best apple pie and this is it!

For the filling:
  1. Peel and slice apples. Add all ingredients (except the butter) into a large bowl and mix until incorporated.
  2. Place a large pan on the stove on medium heat. Add butter to melt. Add in apple filling sauté for 25-30 minutes until the apples still have texture but are relatively soft and have a caramel sauce coating. Add mixture back into the bowl to cool.
For the crust:
  1. Mix flour, salt, cinnamon and sugar in a large bowl. Add cubed cold butter and use a pastry cutter, fork or food processor to break down the butter into pea-sized chunks. Add cold water and mix until a shaggy dough forms.
  2. Pour out dough on a work surface and form into 2 equal disks.
  3. Cover disks with plastic wrap and place in the fridge for 30 minutes.
For pie assembly:
  1. Preheat oven to 425 F.
  2. Roll out one pie crust and place it in a pie plate. Add filling into the pie.
  3. Roll out the second dough into a uniform square shape. Mix cinnamon and sugar in a small bowl and sprinkle over the dough. Use your hand to even it out. Roll the dough tightly and using a bench scraper, cut into small thin disks.
  4. Place disks over the top of the pie and brush with a little milk or egg wash.
  5. Bake pie for 10 minutes at 425 F, then change the heat to 350 F while keeping the oven door closed. Bake the pie for another 45 minutes or until desired colour.
  6. Let pie cool for about 30 minutes before slicing and enjoying :)
