Philly Cheesesteaks
This twist on the classic has flavourful meat with a choice of mushrooms, onions and peppers! The fresh rolls and creamy provolone sauce creates the perfect sandwich!

Instructions
For the rolls:
- Mix water, yeast and sugar and let sit for 5 minutes until bloomed.
- Add flour, salt, yeast mixture and softened butter to a stand mixer and mix on low for 7 minutes or until smooth.
- Transfer to a buttered bowl, cover and let rest for 1 hour.
- Separate dough into 6 and form into logs. Transfer to a parchment-lined baking sheet and cover with plastic wrap and a dish towel and let rest for another 1-2 hours or until doubled in size. Make sure there is space between each bun.
- Preheat oven to 375F. Score buns and brush with egg white and bake for 20 minutes.
- Let cool for 20+ minutes before slicing.
For the meat:
- Slice beef as thin as possible and transfer to a bowl.
- Add the rest of the ingredients and mix. Allow marinating for at least 30 minutes.
- For toppings, slice onions and sauté on medium-low for 30 minutes, stirring every once in a while until they are a deep golden brown, remove from heat.
- Sauté mushrooms in the same pan and cook for 5-7 minutes until they release liquid.
- Add peppers, salt and pepper and cook for another few minutes until the peppers are soft.
For cheese sauce:
- Melt butter and garlic in a medium pot. When the garlic is fragrant, add flour and whisk to combine.
- Add milk and whisk. Allow to come to a simmer on medium-low heat.
- Add grated cheese and whisk until combined. Add dijon and add salt & pepper to taste.
- When ready to assemble, sear slices of meat on medium-high heat for 1 minute per side. Add desired toppings and stir to incorporate. Mix the filling and desired amount of cheese sauce in a bowl. Add to a toasted roll and enjoy :)
