Instructions
Dough:
- Add yeast and sugar to water, stir and set aside for five minutes. In the meantime, add flour and salt into your stand mixer.
- Once yeast is bloomed, add to flour and knead for 7 minutes until dough is together and tight.
- Oil bowl, add dough and cover for 1-2 hours
Meatballs:
- Add all ingredients to a bowl and mix until just combined. To check for salt content, cook a small piece and taste.
- To cook meatballs, Preheat oven to 350F. Form and sear meatballs in a pan on medium heat until golden brown on all sides. Transfer for a 350F oven for an extra 10-15 minutes until cooked through.
Marinara:
- Sauté onions in olive oil until translucent, add tomato paste and cook for an extra 5 minutes.
- Add garlic and seasonings and stir. Add white wine and cook out for another 3 minutes to deglaze the pan.
- Add tomatoes, sugar, fresh basil and season to taste. Let simmer for at least 30 minutes.
To finish:
- When ready to assemble, preheat oven to 450 F and line a sheet pan with parchment.
- Divide dough into 4 and roll out to desired thickness. Add 3-4 meatballs, mozzarella and seal with egg wash.
- Bake for 15-20 minutes or until golden brown.
- Brush with garlic butter and serve warm, enjoy :)

There’s been a viral chicken caesar wrap floating around for a while and I thought it was time I tried it myself! The specific chicken caesar wrap is found at Vinny’s Cafe in Florida, and is loaded with romaine, chicken, parmesan, and dressing, and even includes potato chips! The mixture is chopped up finely and then stuffed into a green tortilla. I thought I’d put my own spin on it and add my favourite hot honey chicken bites, and bacon, which made this just a little more special.
