Garlic Sesame Beef Spring Rolls
These spring rolls are delicious, fresh, and come together in less than 30 minutes and make the perfect summer meal. If it’s a hot night, I’m not in the mood to make rice but, rice paper is an easier take and takes a minute to come together!
The beef is thinly sliced and seared with onion for a few minutes. Usually, I’d marinate the beef overnight but even marinating it for a few minutes brings out more flavour than you’d think! I paired these rolls with Chinese cabbage which is similar to romaine or napa cabbage, and then we make the easiest creamy miso sesame sauce to dip the spring rolls!

For the beef:
- To make preparation easier, you can ask your local butcher to thinly slice the beef into "fast-fry" steak. Slice roast into thin slices and set aside.
- Slice white onion and grate garlic cloves. Mix all ingredients for the marinade in a large bowl.
- Place beef into the marinade and mix till all the beef is fully coated. Meanwhile preheat a large pan, and add a tbsp of neutral oil.
- Sear the beef for 10 minutes on medium/high heat until it's slightly caramelized and cooked.
For the sauce:
- Add all the ingredients to a jar, and immersion blend until smooth, or add to a blender.
- Add to a container and refrigerate until ready to use.
To assemble:
- Dip a rice paper sheet in cold water and allow to sit for 1 minute until soft.
- Add a piece of cabbage and then a large scoop of meat (1/4 cup-1/2 cup) to the middle.
- Bring the middle up and fold in the sides. Tightly roll. Sprinkle with sesame seeds. and slice in half. Enjoy with the miso sesame sauce!
