Grilled Zucchini with Whipped Feta
This is a perfect side dish in the summer, when zucchinis are in season! I always find myself with a surplus of zucchinis and grilling them is my favourite way to bring out their natural sweetness. I pair the grilled zucchini with a spicy, tangy, whipped feta to balance them out!

Instructions
To prepare zucchini:
- Wash and dry the zucchini. Slice the zucchini irregularly and add to a large bowl. Season with salt and allow to sit for 5-10 minutes. (Slicing irregularly allows the zucchini to not fall through the grill when putting them directly on the barbecue.)
- Dry the zucchini with paper towel and set aside until ready to grill.
- Preheat the grill to 450°F. Season the zucchini with additional salt, pepper, and add the zucchini to the barbecue. Grill for 3-5 minutes or until charred on both sides.
- Plate the zucchini on top of the whipped feta and serve hot.
For whipped feta:
- Preheat the oven to broil.
- Slice the red pepper and medium hot pepper and add both halves to a tin-foil lined baking sheet.
- Broil for 10 minutes or until slightly charred.
- Add the feta, garlic, lemon juice, greek yogurt, fresh parsely to a food processer and blitz until smooth. Add in the charred peppers and blitz until combined. Season with salt & pepper to taste.
- Transfer to a container and refrigerate until ready to use.

These spring rolls are delicious, fresh, and come together in less than 30 minutes and make the perfect summer meal. If it’s a hot night, I’m not in the mood to make rice but, rice paper is an easier take and takes a minute to come together!
