Instructions
To prepare the fixings:
- Boil a large pot of water and blanch your fresh chow mein noodles for 30 seconds, just to make them pliable. Coat with sesame oil to stop them from sticking.
- Cube or slice your beef and set aside. Cut chicken thighs into bite-sized pieces and set aside. Defrost your shrimp and set aside.
- For your vegetables, wash and quarter the mushrooms, roughly dice onion, slice broccoli into smaller pieces, and thinly slice the celery stalks and red pepper.
- Finely mince the garlic and ginger and add to the same small bowl and combine.
- In 3 squeeze bottles, add water to one, your stir-fry sauce to another and vegetable oil in another. You can also spoon them on the grill if you don't have bottles!
To assemble chow mein:
- Preheat your grill to 450-500F. Add a thin layer of vegetable oil to half the grill. Add your beef first and season with salt & pepper. Allow the beef to brown on one side before flipping.
- Add the chicken next to it, leaving some space, and season the same. Add 1/3 of minced garlic and ginger to both meats, and cook for 3 minutes.
- Add a layer of stir-fry sauce to coat the meats. Cook for another 2 minutes or until both are cooked through. Remove from heat.
- On the other side of the grill, add oil and the broccoli pieces. Season with salt and add water to start steaming the broccoli. Cook for 1-2 minutes and then add the rest of the vegetables. Allow to brown slightly and soften. Add another 1/3 of the garlic/ginger and stir to combine. Add a large squeeze of sauce to coat the veggies.
- On the side of the grill where the meat was cooked, add a thin layer of oil and add your shrimp. Season with salt, pepper, and the last of the garlic/ginger. These cook in one minute, so add a squirt of sauce to coat and cook for another 30 seconds. Remove from heat and add to the bowl with the other cooked meat.
- Then, add your chow mein noodles and bean sprouts onto the grill to heat up for about 30 seconds. Toss the vegetables into the noodles and add back in your beef, chicken and shrimp. Add as much of the leftover sauce to the chow mein and cook all together for another 2 minutes or until it's mixed thoroughly.
- Serve immediately topped with additional soy sauce, green onion and sesame seeds. Enjoy!
