Cheesy Scalloped Potatoes with crispy proscuitto
This twist on the classic scalloped potatoes is absolutely delicious from the extra salty bite of the prosciutto. Meat + cheese + potatoes?? Can’t go wrong.

Instructions
- Preheat the oven to 325F. Mandolin the potatoes and rinse off. Set aside.
- In a medium pot, heat butter and sauté shallots and garlic until softened. Add salt, pepper and oregano. Add milk and cream and heat on medium until simmering.
- Meanwhile in a cast iron pan, sear prosciutto off for about 2 minutes per side on medium heat.
- Remove the cast iron pan from heat and layer half the potatoes on the bottom. Add the prosciutto on top and add the rest of the potatoes. Pour over the hot milk mixture and cover with aluminum foil.
- Bake in the oven for 1 hour and 30 minutes and remove from oven. Top with cheeses and broil uncovered for about 10 minutes or until the top is crispy.
- Top with chives and serve immediately :)
