Sausage & Broccoli Rabe Gnocchi

The sausage and broccoli rabe make this easy gnocchi dish so tasty! This is a perfect recipe to try if you've never made homemade gnocchi before!

For gnocchi:
  1. Chop potato and boil in salted water until soft.
  2. Use a potato ricer and create a well with the potatoes on a flat surface. Allow to cool for 10 minutes, or place the potatoes on a plate or sheet tray and place in the freezer.
  3. Add a yolk and mash to combine. Slowly add flour and salt until a soft dough forms. Knead for 3-4 minutes or until it is fully combined.
  4. Divide dough into 4 and roll out into logs. Cut into small squares and use flour to extra dusting so they don't stick.
  5. Preheat a medium pan on medium heat, and when it's warm, add 2 tbsp of butter. Boil the gnocchi in salted water until the gnocchi floats (30 seconds - 1 minute).
  6. Transfer the gnocchi to the pan and sauté until the gnocchi is lightly golden brown, remove & set aside.
To assemble:
  1. Sauté sausage in a pan on medium heat and crumble. Add onion just before the sausage is fully browned.
  2. Roughly chop broccoli rabe and blanch in salted boiling water for 2 minutes.
  3. Add broccoli rabe to the pan with sausage and sauté for another 2-3 minutes.
  4. Add minced garlic, red pepper flakes, salt and pepper.
  5. Add cream and simmer for another 3 minutes. Add the gnocchi and parmesan cheese, and toss to coat. Serve warm with fresh parmesan & fresh pepper :)
