Salmon Tzatziki Bowl
This flavourful bowl is filled with crispy potatoes, flaky salmon, a quick Greek salad, tzatziki and a tangy feta red pepper drizzle. Perfect for a week night meal!

Instructions
For potatoes:
- Preheat oven to 400 F. Slice potatoes into 1/4 inch rounds and add to a bowl. Toss with olive oil and seasonings and add to a parchment-lined baking sheet.
- Bake for 35-40 minutes, flipping halfway.
For salmon:
- Cube salmon into bite size pieces and add to a bowl with the marinade ingredients. You can leave the salmon to marinate in the fridge while you prep the toppings.
- When ready to cook, heat a large pan on medium heat with a tbsp of vegetable oil.
- Sear the salmon on each side until browned (approx. 4-5 minutes) and remove.
For toppings:
- For feta sauce, add ingredients to a blender until smooth. Add to a squeeze bottle.
- For the tzatziki, add Greek yogurt, grated garlic, finely chopped dill and the rest of the ingredients. Taste for any additional salt and mix to combine.
- For greek salad, finely chop vegetables and add the rest of the ingredients. Mix to combine.
- When ready to eat, add a bed of potatoes, top with salmon, salad, feta sauce an tzatziki and enjoy!
