Ingredients

Instructions

  1. Add flour to a work surface and create a well in the center. Add eggs and use a fork to slowly incorporate the flour.
  2. Eventually, a sticky dough will form and you can begin to work the dough with your hands. When the dough is pliable, knead the dough for about 5 minutes or until a smooth ball forms. Poke the dough and if it springs back, it's ready. Wrap in plastic wrap and set aside for 30 minutes.
  3. When ready to cook pasta, heat a large pot of water on high heat. Section the dough into 4 equal parts. Use a pasta attachment or rolling pin to roll out the dough to the desired thinness and cut them into small triangles.
  4. Boil the pasta for 1-2 minutes and add to the simmering soup to finish cooking. The pasta will soak up salt from the broth so readjust seasonings to your liking.
For soup:
  1. For soup, brown the ground beef and sausage on medium heat in a large pot. Add onion, carrot and celery and sauté for another 5 minutes. Season with salt & pepper.
  2. Add tomato paste, chile, garlic and seasonings and sauté for another couple minutes. Deglaze with white wine and cook out for 2-3 minutes. Salt as you go.
  3. Add broth and tomato pureé and simmer on low for 20 minutes. Add milk and cream and stir to combine. Increase the heat to medium and add cheese, sugar and vinegar and any additional salt.
  4. Serve warm with a dollop of ricotta and fresh basil and enjoy :)
