Kataifi Ice Cream Sandwiches
These ice cream sandwiches are crispy, satisfying, and so easy to make! The kataifi layers are buttery and golden, and stay crunchy even with a thick layer of creamy vanilla ice cream in between them! I can’t wait to eat these in the summer!

To prepare:
- Preheat the oven to 350 F.
- Add the kataifi to a bowl and try to separate the strands as best as you can. Add in the melted butter and mix until fully combined, and all the strands are coated.
- Add to a baking sheet and spread it out evenly. Add an extra baking sheet on top and push down gently.
- Bake for 35 minutes, then remove the extra baking sheet and bake for an additional 10 minutes.
- While it bakes, make the ice cream layer. Add the heavy cream to a bowl and whip it until it forms stiff peaks. Then, fold in the sweetened condensed milk, vanilla, and salt. Add to the freezer, until ready to assemble.
- Add the kataifi layer to a wire-lined baking sheet and allow to cool.
- When cooled, cut two pieces to fit an 8x8 baking pan. Line the baking pan with plastic wrap, and and add one piece to the bottom. Pour the ice cream layer on top, then top it with the other kataifi layer.
- Cover with plastic wrap and freeze for 6 hours or preferably overnight.
- Cut into 9 pieces carefully, using a serrated knife. Store in an air-tight container in the freezer, and enjoy!
