Peach Crisp
Usually, peach cobbler is the summer classic, but this twist is delectable and crispy with the crumbly oat topping. This is perfect with vanilla ice cream and is easy to put together.

Instructions
- Score each peach’s skin and add to a pot of simmering water for 2-3 minutes. Add peaches to iced water to shock. Allow to sit for 5 minutes. Peel skin and slice into thick chunks.
- Add peaches to a large bowl and add the rest of filling ingredients. Mix to combine.
- To make crisp: mix oats, flour, sugar and cinnamon in a bowl. Add cubed butter and use your hands or a fork to incorporate the butter until it forms a crumble.
- Preheat oven to 400F. Add peach filling to a cast iron pan or glass dish. Add crisp on top and bake for 35-40 minutes or until golden brown and bubbling. Serve warm with ice cream and enjoy :)
